This simple and fresh Caesar Salad is a Nali take on an old favourite. It has the key elements of a great Caesar, with the added kick of Nali - in this case Nali Garlic...but you can use what ever you like.
For the Chicken
1 chicken breast
2 tbsp Nali of your choice (Garlic used in the photo)
1 tbsp of Extra Virgin Olive Oil
Squeeze of lemon juice
Mix the Nali, oil and lemon juice in a bowl. Add the chicken breast, and rotate and flip it to make sure it's well coated in the marinade. Let sit for 15 - 20 minutes. Get cracking on the salad.
Grill using a barbecue or griddle pan (to give you those nice grill marks!) on medium-high for 5 - 10 minutes each side, while preparing the rest of the salad as per the link above.
Remove from the heat, and let rest for a few minutes before slicing at an angle, ending up in great-looking chunks of Nali-coated chicken. Place on top or toss through your Caesar Salad, and enjoy!
Serves 4 as a side, 2 as a meal by itself.
